The grapes at Centennial Vineyard are grown in a cold climate, much lower temperatures than most other Australian wine regions. Cold climates results in much slower and more evenly ripening than in warm regions. The result is a grape product that is both more balanced and more aromatic.
Other advantages of growing grapes in a cool climate are that the wines are fruitier and more delicate, and the natural acidity is higher which gives the wine more crispiness and the products tend to age greater.
Centennial Vineyards have two working vineyards, one vineyard in Bowral, and another in Orange, named Bridge Creek.
The vineyard in Bowral is located 760m in altitude, and the colder climates of the Southern Highlands influenced by maritime weather patterns are ideal for the growth of Chardonnay, Pinot Gris, Gewurztraminer, Gruner Veltliner, Albarino, Riesling, Pinot Noir (4 clones), Pinot Meunier and Tempranillo.
The average temperatures at the Bridge Creek Vineyard in Orange are somewhat warmer than those of Bowral, and the exact location of the vineyard gives it good afternoon sun exposure. At this vineyard, grown are plantings of high-quality Cabernet Sauvignon and Merlot, the exceedingly rare Mencia, Rondinella & Corvina, and Pinot Noir (Abel clone), Shiraz and Viognier, all of which are grown best in a warmer climate. As of 2020, this vineyard is also in the process of gaining Organic Certification.
Centennial Vineyards Bowral, in collaboration with the Bowral Bookshop and BDCU, operate the Supper Club, where literary events are held at the Vineyard that members of the Supper Club can attend, and must be booked in advance. In early 2020, the Supper Club held speaking events featuring authors Jean Kittison and Alexandra Joel.
